I am so excited to show you all the duck soup dumpling how I made! This took about 24 hours from start to finish! I made a collagen rich broth using duck feet- no need for gelatin when you have duck feet! That broth simmered for around 16 hours to really get that texture! I then roasted duck legs until the skin got extra crispy and the meat was tender! This works best when you let the duck dry out for a few hours with salt before roasting!
